Serving Suggestions

1. Hot Smoked Organic Trout, with a flaky texture

- delicious in a potato salad,
- tossed with pasta, crème fraiche and fresh herbs such as chives, dill or tarragon,
- try it flaked through rice with fresh or frozen peas, finely chopped onions which have been fried in butter until golden.

2. Cold Smoked Organic Trout

- makes a lovely starter with brown bread, butter and a squeeze of lemon juice,
- or on oatcakes with cream cheese or crowdie.
